Movie Review: Packed with Quality information

First of all, I am not a video producer so can not speak to the quality of this DVD other than from a viewer perspective. In my mind...it is clear and crisp and Ken is easily understood. I know one rater said the quality of the video was in question...I did not see that.

You will like Ken immediately. He is just one of those folks you know you would like. He speaks very clearly and slowly. I watched the video the first time just for pleasure and the second time I took a few notes. Jotted down Ken's recipe for sushi rice and etc.

Armed with this video and a book such as the excellent "The Complete Book of Sushi" by Hideo Dekura, Brigid Treloar, and Ryuichi Yoshii. I can guarantee you will be well on your way to your first rolls or your first Nigiri sushi. One thing I would do before rolling your own though is to stop by a sushi bar and sit right in front of the chef. Watch him and enjoy a nice lunch or dinner. You will build confidence just watching him prepare the food.

The video covers a lot of stuff in a short time. (one hour) but it is well worth the spend.

The only thing I wish Ken would have shared was his recipe for spicy sauce. Guess I will have to go to Canada and ask for it. :)

Ken also discusses types of fishes and seafood, how to care for it, how to slice it, where to get it and etc.

You will enjoy this video (watch the bloopers at the end...it will confirm Ken's sense of humor)

Movie Review: Great DVD...almost as good as his restaurant!

I was stunned by the level of detail packed onto a one-hour DVD! I've got to admit that I'm more of a fan of eating sushi than I am of preparing it (the nicks on my fingertips tell the story), but Ken's incredibly detailed instruction made me believe that even I, with no discernible motor skills, could actually do it!

One note, though: this disc couldn't possibly capture Ken's gregarious personality and his easy warmth with patrons. I've been visiting his restaurant for a couple of years now and he's one of the main reasons why I keep coming back. At the end of a particularly long day at work, I love to just sit and chat, watching him prepare the delicious food I eventually take home.

And I may as well add a shameless plug: if you're ever in the east end of Toronto, and feel like going out of your way for good (no, great) food, IT IS WORTH THE TRIP! I eat a LOT of sushi and Ken makes some of the very best in the city! The rolls he creates in the latter half of the video are among the most delicious on the menu (trust me, I've tried them all!). It's a pity he didn't tease viewers with his House Roll (though I don't want to give away any of his secrets...).

I've been a pretty big fan of sushi dining for a couple of years, and finally I decided to take my first steps into making my own sushi at home. I was pretty intimidated because making sushi *properly* is'nt exactly what I'd call an "easy task". Luckily I got my hands on the first volume of the Ken Sushi Video series and all i can say is what a FANTASTIC video! Ken takes the time to really break down all the steps necessary, so that after a bit of practice I was on my way to actually making sushi that looked and tasted fabulous! I was so impressed with what I learned from this video that I invited over some of my fellow sushi lovers for a sushi party! Needless to say, it was a blast. Thanks Ken for making such an awesome instructional video!

Movie Review: That's it! Beginners guide to Sushi making

Well, I liked it a lot. It gave me all the information on how to prepare the fish and how to work with knife. The greatest takeaways however are the receipe for vinegard and wasabi - it is excellent! Being only an amateur with limited access to fresh fish, I would like to get more hints on how to handle frozen fish - what to look for when you are buying it and how to properly defrost it so it tastes best. Ken is so fast that it is hardly possible to see exactly how he prepares nigiri. But you will get it ultimelty :-)
I also got a book by Kimiko Barber entitled "sushi - taste and technique", but get the DVD only if you are a beginner. The book is not necessary in that case.

Movie Review: This was a big help to me

I recently purchased from Amazon two highly rated books on making sushi at home before ordering this DVD. Both books are excellent and I wouldn't give them up. Even so, I struggled with my at home sushi before Ken's video instruction. Nothing comes close to watching a master chef work. After the first time watching Ken's DVD, I resolved a number of problems in making my own sushi and am finally happy with the results. Now I can relax at my favorite sushi bar... without straining over the counter to see what the chef is doing. This is well worth the purchase price and a necessary item in your sushi library.
